Stability and Stabilization of Ascorbic Acid
نویسندگان
چکیده
acid (vitamin C) is extensively used in a variety of formulations including creams. It is an ingredient of anti-aging cosmetic products alone or along with alpha-tocopherol (vitamin E). In solutions and creams, ascorbic acid is susceptible to air and light and undergoes oxidative degradation to dehydroascorbic acid and further to inactive products. The degradation is influenced by oxygen, temperature, viscosity and pH of the medium and is also catalyzed by metal ions, particularly Cu2+, Fe2+, and Zn2+. This review highlights the stability and modes of stabilization of ascorbic acid in both the cosmetic and pharmaceutical preparations. A number of approaches involved in the stabilization of the vitamin such as the use of antioxidants, stabilizers, synergists, other vitamins, and formulation of multiple emulsions, nanosuspensions, microencapsulation, etc. have been discussed. Effect of Foliar Spraying of Ascorbic Acid on Cell Membrane Stability, Lipid Peroxidation, Total Soluble Protein, Ascorbate Peroxidase and Leaf Ascorbic Acid Under Drought Stress in Grapes
Drought is the most common environmental stress in vineyard occurs in soils with low water content, even in irrigation condition. To evaluate foliar spraying of ascorbic acid under drought stress, a research during 2012 to 2013 years in the natural environment, and one year after the establishment of the cuttings in clay loam soil was conducted. Cultivars with two-level white seedless and khosh...

متن کاملAlleviation of Adverse Effects of Copper on Allium cepa L. by Exogenous Ascorbic Acid Application
Abstract In this study ameliorative effects of ascorbic acid (0.5 mM) on onion (Allium cepa L. cv. Red Azarshahr) under copper stress (Cu: 6.5 μM) were studied. Fresh weights of leaves and roots were reduced in seven week old plants under excess copper condition. Cu stress also reduced membrane stability index in leaves. There was a considerable increase in H2O2 content and lipid peroxidation i...
متن کاملAntioxidant effect of ascorbic acid on the quality of Cobia (Rachycentron canadum) fillets during frozen storage
The effect of aqueous solutions of ascorbic acid (AA) on the rancidity development in Cobia (Rachycentron canadum) fillets during frozen storage was studied. Cobia fillets were treated with ascorbic acid (AA 0.25% and AA 0.5%) then stored at -18°C up to 6 months. Rancidity development was measured by several biochemical indices including free fatty acids (FFA), peroxide value (PV), and thiobarb...
متن کاملStabilization of ascorbic acid in human plasma, and its liquid-chromatographic measurement.
We describe two independent HPLC procedures for the rapid, accurate analysis for ascorbic acid in human plasma. No sample extraction or phase separation is required. We also describe a procedure for preparing a human plasma reference material for use in clinical laboratory analysis for ascorbic acid. The ascorbic acid in plasma can be determined in 15 min, with as little as 50 microL of sample....
